WIAW- Food glorious food!

I’ve been easing back onto whole plant foods since my juicy reboot. I’m still sticking to smoothies/juice for breakfast, and then increasing back to my normal vegan eats for other meals. I’m really enjoying all the delicious foods and flavours that I missed over the last week and definitely feel like I appreciate them even more and that my taste-buds feel more alive than ever!! These were my eats from yesterday:

I started the day with my usual hot water and lemon and then I decided to make Angela’s pumpkin pie smoothie for breakfast, I halved the recipe and left out the molasses and coconut cream as I didn’t have either. This was so delicious, I haven’t opened any pumpkin in a month or two and I definitely miss it! Tastes like autumn :) I will definitely be putting the rest of it to good use over the week!

Mid morning I had one of the kitchen-sink brownie batter balls I whipped up last night using Amber’s recipe. It made a pretty huge batch so I might freeze some for another time. I was planning on going to the gym then but I got carried away looking at holidays and using my new sprouting jar! I asked my mum to get me one for Christmas so she ordered one online and it is an absolute monster haha! I am attempting to sprout sunflower seeds for the first time, they are my favourite sprouts so I will see if I can pull it off, definitely easier having the mesh lid attached though!

I had 2 of these stuffed dates I got for Christmas pre-gym. So good, medjool dates are my absolute favourite treat! I headed off to the gym finally it was nearly 12.30 at this point, I did best body bootcamp strength workout A with cardio intervals in-between sets, it took around 50 minutes total.

Post gym I came back and made a mini protein pudding. My shaker is broken so I’ve taken to making protein pudding’s instead. I usually just use sunwarrior, chia seeds and tahini but I mixed it up today. I used a scoop of sunwarrior, a heaped tsp of maca, ½ tsp of chlorella, a tbsp tahini and some coconut water to get it to the right consistency. There is literally no way that was ever going to look good in a photo, but it tastes great which is all that matters!

I had a day off work today so I had a pretty restful day, spent mostly reading and relaxing. Mid afternoon I broke for lunch I made a salad with rocket, mixed leaves, cucumber, tomatoes, quinoa, lime juice, smoked tofu (which has been sat in my fridge for about a week oops!) and topped with some ginger peanut dressing and some pumpkin seeds- so delicious! I usually throw a heap of stuff together like this and call it lunch! Depends what leftover beans/grains I have lying around.

I made Nick a batch of cookies mid afternoon as I had promised to for the last few days. I based the batch on an Alicia Silverstone oatmeal cookie recipe from one of my new recipe books but I tweaked it so much that it was almost a new recipe so I will post it another day. These were Peanut Butter, chocolate chip raisin oatmeal cookies. I sneaked some of the leftover batter and one of the smaller ones- they were pretty darn good! I forgot to stir the chocolate chips in and then just saw them sitting on the counter, so I just placed them on the top of each cookie, hence why they look insanely chocolatey. They are vegan, gluten free and free of refined sugar!

I had really bad cramps again mid afternoon, not as bad as the other day though thankfully, I don’t know what is going on with me this month!! I had an unpictured persimmon late afternoon, totally addicted, my absolute favourite fruit of all time!

I wasn’t hungry at all later in the day, guess my body is still getting used to whole foods again. I decided to make a batch of chunky vegetable soup so I had a simple bowl of that. I’ll post this recipe another day too. I followed it up with a teeny tiny apple and a handful of mixed Urban fruits which I was taste testing and will post a review on another day.

Overall, I’ve had a pretty relaxing day, full of lots of yummy fresh whole foods, I’m still kind of readjusting to whole foods but overall I feel pretty great. I am missing drinking so much juice though! I just don’t want to clean the juicer for a few days ha!

  1. Those cookies look absolutely delightful! best thing I’ve eaten today would probably be my breakfast: super dark chocolate oatmeal! Yummy :)

  2. Looks like a tasty day of eats! I love protein puddings as well, and they are hard to make look attractive in photos! Best thing I’ve had today was some chia seed pudding, delish!

  3. I did my first WIAW yesterday, and I tried out celery and peanut butter for the first time. I was a little hesitant, but it tasted great!

    The salad looks really good, though I’m wary about trying tofu …

    • I love celery + PB, such a good combo. Tofu is great, maybe get some that is already ready to eat or marinaded to try initially, as the firm stuff can be quite fiddly to get right initially and put some people off.
